One of my all-time favorite breakfast treats is this yummy banana bread. It’s easy to make and bakes up deliciously moist and flavorful. I made this recipe for more than 20 years and have shared it with both friends and family.
A crowd-pleaser, it never lasts long. Consider making two loaves if you’re feeding a lot of people (or if you have hungry teenagers in the house!).

Banana Bread
Delicious and oh-so easy to make! We love it for breakfast, a mid-morning snack, and even for dessert.Original recipe credit: Emeril Lagasse.
Ingredients
- ½ cup solid vegetable shortening like Crisco
- 1 cup sugar
- 2 eggs
- ¾ cup mashed ripe bananas about 2 large bananas
- 1 tsp. baking soda
- ½ tsp. salt
- 1¼ cups flour
- ½ tsp. cinnamon
- ½ cup chopped nuts optional
Instructions
- Preheat the oven to 350°F. Grease and flour a 9×5-inch loaf pan and set aside (a non-stick baking spray with flour works well).
- Using an electric handheld or stand mixer, cream the shortening and sugar till light and fluffy. Then add the eggs one at a time, beating thoroughly after each addition. Add the bananas and mix till well incorporated.
- Next, add the baking soda, salt, flour, cinnamon, and nuts (if using) and mix thoroughly. The batter will be thick and sticky.
- Pour the batter into the prepared pan and bake for about an hour or until the center is brown and set. It should spring back when touched.
- Allow the bread to cool in the pan for 10 minutes, then remove it to a wire rack to cool completely.
Notes
Be sure your bananas are very ripe, or the bread won’t have much flavor.
