Banana Bread

Delicious and oh-so easy to make! We love it for breakfast, a mid-morning snack, and even for dessert.

Ingredients
  

  • 1/2 cup shortening like Crisco
  • 1 cup sugar
  • 2 eggs
  • 3/4 cup mashed ripe bananas
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups flour
  • 1/2 cup chopped nuts optional
  • 1 pinch cinnamon

Instructions
 

  • Preheat the oven to 350°F. Grease and flour a 9x5x3-inch loaf pan (baking spray with flour works well, too).
  • Using an electric mixer, cream the shortening and sugar. Then add the eggs one at a time, mixing well after each addition. Add the bananas and mix well.
  • Add the baking soda, salt, flour, nuts (if using) and cinnamon and mix thoroughly. The dough will be sticky.
  • Pour the dough into the prepared pan and bake about one hour or until the center is brown and set.
  • Cool on a wire rack, then serve.

Notes

Be sure your bananas are very ripe, or the bread won’t have much flavor.
