Preheat the oven to 350°F. Grease and flour a 9x5x3-inch loaf pan (baking spray with flour works well, too).
Using an electric mixer, cream the shortening and sugar. Then add the eggs one at a time, mixing well after each addition. Add the bananas and mix well.
Add the baking soda, salt, flour, nuts (if using) and cinnamon and mix thoroughly. The dough will be sticky.
Pour the dough into the prepared pan and bake about one hour or until the center is brown and set.
Cool on a wire rack, then serve.
Notes
Be sure your bananas are very ripe, or the bread won’t have much flavor.
