Once the weather begins cooling off, our slow cooker starts heating up! One of the first things I make in it is this healthy turkey chili, which is on regular rotation in our house during fall and winter.
It’s a lighter version than traditional chili (which we also love), but still loaded with great flavor. Another bonus: it comes together fast. We love an easy dish that’s satisfying and good for us!
Lean, ground turkey replaces beef, and is complemented with fiber-rich black beans and a trinity of peppers, onions, and garlic. Crushed tomatoes, tomato sauce, and beer add richness, and chili seasoning ensures depth of flavor.
If you like, add corn for some additional sweetness and texture, and finish it with your favorite toppings. Hubby loves chopped onion and I’m partial to freshly shredded Cheddar cheese.

Easy Weeknight Turkey Chili
Ingredients
- 1 ¼ pounds lean ground turkey
- 1 large onion chopped
- 1 garlic clove minced
- 1 1.25-oz. envelope chili seasoning mix such as McCormick
- 6 oz. beer half of a can
- 1 ½ cups frozen corn kernels optional
- 1 red bell pepper chopped
- 1 green bell pepper chopped
- 28 oz. can crushed tomatoes
- 15 oz. can black beans, drained and rinsed
- 8 oz. can tomato sauce
- ¾ tsp. salt
- Toppings: shredded Cheddar cheese, chopped red onion, sliced fresh jalapeños
Instructions
- Cook turkey and onion in a large skillet over medium-high heat, stirring often, about 8 minutes or until turkey crumbles and is no longer pink and onion has softened. Add minced garlic and cook for another 30 seconds, then sprinkle chili seasoning over all and stir till well combined.
- Add the beer, and cook another 2 minutes, stirring occasionally.
- Remove from heat and transfer mixture to a slow cooker; stir in corn (if using) and remaining ingredients until well blended.
- Cover and cook on low setting for 6 hours.
- Serve with desired toppings.
