Cilantro-Lime Vinaigrette

Brighten salads, vegetables, or your favorite Mexican dish with this tangy, fresh dressing!

Cilantro blended with lime juice, olive oil, honey, and spices delivers a delicious vinaigrette in just five minutes. Use it to top your favorite salad or veggies. It’s amazing on tacos and burritos, too.

If you like a creamier dressing, simply add an avocado or 1/2 cup of plain Greek yogurt to the ingredients. One dressing three ways – what could be better?

Cilantro-Lime Vinaigrette

Ingredients
  

  • 2 cups fresh cilantro
  • 1 garlic clove
  • ¼ cup lime juice
  • 2 tsp. maple syrup or honey
  • ½ tsp. ground coriander
  • ½ tsp. sea salt
  • ½ cup extra-virgin olive oil

Instructions
 

  • Add the cilantro, garlic, lime juice, honey or maple syrup, coriander, and salt and pulse to a food processor to combine.
  • With the blade running, pour in the olive oil and process the mixture till smooth.

Notes

  • Try it on our Edamame-Quinoa Salad.
  • To make a creamy version, add one (1) avocado or 1/2 cup of whole milk Greek yogurt to the ingredients in the food processor.
