Add all of the ingredients - except for the olive oil - to a food processor or blender. Place the lid on the processor and pulse several times till the ingredients are well combined and the cilantro leaves are generally pulverized.
With the processor/blender running on low speed, drizzle in the olive oil and process till smooth, increasing the speed as needed.
