Quick and Easy Roasted Chicken Breasts

We’ve provided a basic seasoning recipe below, but feel free to experiment.

The key to perfectly roasted chicken breasts is timing. Cook them too long and they’ll be tough. Pull them too early and you’re dealing with raw meat. We roast them at 400°F and start checking the temperature at about 25 minutes. While you want them to reach 165°F, keep in mind that they will continue cooking out of the oven. Remove them just before they reach that optimal mark and allow them to come to temperature while resting.

Boneless, skinless varieties will cook faster, so keep that in mind, as well.

Quick and Easy Roasted Chicken Breasts

Roasted chicken breasts make a great main course, or a wonderful addition to soups, salads, and recipes that call for cooked chicken.

Ingredients
  

  • Olive oil
  • 1 lb. chicken breasts bone in, skin on
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400°F.
  • Lightly coat a shallow baking dish with cooking spray or olive oil and set aside.
  • Rinse chicken and pat dry with paper towels. Rub skin with the olive oil and sprinkle the seasonings evenly over breasts.
  • Place in the prepared dish and roast for approximately 40-50 minutes. The chicken is done when the internal temperature reaches 165°F.
  • Remove from the oven and let rest 15-20 minutes before serving.
  • If you're using the chicken for soup, chicken salad, or another dish, remove the skin and bones and chop or shred it when it's cool enough to handle.

Notes

  • Chicken breast can become overcooked very easily, so keeping an eye on the temperature is important. We usually remove the chicken from the oven when it reaches 155°F, as it will continue to cook while it rests. Just be sure it reaches the safe temp of 165°F – no one wants undercooked poultry!
  • If you want to use boneless, skinless chicken breasts, just reduce the cooking time to about 30 minutes.
