Lightly coat a shallow baking dish with cooking spray or olive oil and set aside.
Rinse chicken and pat dry with paper towels. Rub skin with the olive oil and sprinkle the seasonings evenly over breasts.
Place in the prepared dish and roast for approximately 40-50 minutes. The chicken is done when the internal temperature reaches 165°F.
Remove from the oven and let rest 15-20 minutes before serving.
If you're using the chicken for soup, chicken salad, or another dish, remove the skin and bones and chop or shred it when it's cool enough to handle.
Notes
Chicken breast can become overcooked very easily, so keeping an eye on the temperature is important. We usually remove the chicken from the oven when it reaches 155°F, as it will continue to cook while it rests. Just be sure it reaches the safe temp of 165°F - no one wants undercooked poultry!
If you want to use boneless, skinless chicken breasts, just reduce the cooking time to about 30 minutes.
