One of our go-to dinners, especially during the fall, is this super easy roasted pork tenderloin. It’s delicious and easy to prepare, but it also makes for an elegant meal.
All you need are three ingredients: a pork tenderloin, olive oil, and Montreal seasoning. Rub the tenderloin with oil and seasonings, sear in an oven-proof skillet, then pop the whole thing in the oven for 25-30 minutes.
It’s about the easiest prep around!
The Montreal seasoning gives it a wonderfully balanced flavor using salt, pepper, garlic, and onion. Those flavors pair beautifully with roasted sweet potatoes, which you can roast in the same oven as the tenderloin.
We also like to serve a harvest farro and apple salad with it. There’s just something about pork and apples that’s magical.
And did we mention that pork tenderloin is low in fat and calories? Just another reason to add this wonderful cut of meat to your rotating menu.
For dessert, pumpkin chocolate chip cookies or a slice of double layer pumpkin cheesecake are fantastic!
Easy Roasted Pork Tenderloin
Ingredients
- 1 ½ lb. pork tenderloin
- 1 tbsp. olive oil plus more for coating the tenderloin
- 1 tbsp. Montreal seasoning use more, if desired
Instructions
- Preheat oven to 425℉ and adjust rack so it's in the middle.
- Remove any silver skin and excess fat from pork tenderloin, if necessary. Brush with olive oil, then sprinkle evenly on all sides with Montreal seasoning and rub in.
- Heat olive oil in an oven-safe skillet over medium high heat. When oil begins to shimmer, add the pork tenderloin and sear on all sides for 5-6 minutes, till crisp and brown.
- Place skillet with tenderloin the oven and roast for 25-30 minutes, or until a meat thermometer inserted in the thickest part registers 135℉.
- Remove from the oven, transfer meat to a clean cutting board, and loosely tent with foil. Allow it to rest, covered, for 5-10 minutes. Then slice and serve.
