Roasted pork tenderloin makes for an elegant but incredibly easy meal. Just three ingredients is all it takes! Savory and delicious, it's also low in fat and calories. Pair it with roasted sweet potatoes and a harvest salad for the perfect autumn dinner.
1tbsp.olive oilplus more for coating the tenderloin
1tbsp.Montreal seasoninguse more, if desired
Instructions
Preheat oven to 425℉ and adjust rack so it's in the middle.
Remove any silver skin and excess fat from pork tenderloin, if necessary. Brush with olive oil, then sprinkle evenly on all sides with Montreal seasoning and rub in.
Heat olive oil in an oven-safe skillet over medium high heat. When oil begins to shimmer, add the pork tenderloin and sear on all sides for 5-6 minutes, till crisp and brown.
Place skillet with tenderloin the oven and roast for 25-30 minutes, or until a meat thermometer inserted in the thickest part registers 135℉.
Remove from the oven, transfer meat to a clean cutting board, and loosely tent with foil. Allow it to rest, covered, for 5-10 minutes. Then slice and serve.
