Cinnamon Swirl French Toast

Ingredients
  

  • 1 loaf cinnamon swirl bread
  • 4-6 large eggs
  • ¼ cup heavy cream or half-n-half
  • 1 tsp. ground cinnamon
  • ½ tsp. vanilla

Instructions
 

  • Preheat a griddle or large non-stick pan to around 350°.
  • Slice the cinnamon bread into ½-inch thick slices, set aside.
  • In a shallow dish, beat the eggs till frothy.
  • Add the heavy cream, cinnamon, and vanilla, and mix well.
  • Dip each piece of bread into the egg mixture, ensuring both sides are well-coated.
  • Add a little butter or cooking spray to your griddle or pan and add the bread slices in batches.
  • Cook each side for about 3-4 minutes each, or till golden brown.
  • Remove from griddle or pan and keep warm in a 200° oven till ready to serve.
  • Serve with butter and warm maple syrup or powdered sugar.

Notes

  • Bringing your eggs to room temperature will make them easier to mix (you can do this by putting them in a bowl of warm water for a few minutes).
  • When beating your eggs, ensure the egg whites are broken up so you don’t end up with a scrambled egg texture on your toast.
  • A glass pie plate works nicely for the egg mixture and dipping the bread.
